Since the definition of Maintained is fully constructed and Disengaged, I have to wonder: Is there a way to Engage/Fully Engage Structures, and if so, does that mean that if an opponent did so to there structure in response to your declaration of intent to use Battering Ram, they would render their Structure not Maintained and thus make it impossible to damage with Battering Ram because it is no longer a legal target? If so, does the attempt still happen and count as Battering Ram's use for that turn and/or is the Ram still Sacrificed if the sacrifice option is the one declared?

You cannot willfully Fully Engage a manitained structure. It needs to be Condemned, or casued to fully engaged in some other way.

Yes, but, if by spell or other means with a higher Speed than the Ram, you did so in Response to the Ram being used, would it no longer be a legal Target, and thus, immune to the damage. (I could see doing this to a heavily damaged structure if I had plenty of Dwarven Builders in play, who could quickly restore it to Maintained, but no way to repair damage to it, especially if it was a structure with Creatures inside who would be destroyed along with it.) So, is this tactic legal, and would it work? If so, does the attempt still happen and count as Battering Ram's use for that turn and/or is the Ram still Sacrificed if the sacrifice option is the one declared? And what happens to Creatures within the Structure?
NVM the portion about Creatures within the Structure. I just read your new ruling in regards to one of my other posts, so I know already that the Creatures would be destroyed.

I see that Condemn is an Effect, so it couldn't be used in this means, but wasn't sure if there was anything else out there that could Fully Engage a Structure at Reaction Speed, since the Reckoning cards aren't posted here in forums, and I don't seem to be having any luck downloading the spoiler pdf for them. (At the very least, if there isn't a single card which could do this, it opens up the possibility of something to discuss for R&D in the MEGA Ex boards.

I would just like to add that non-maintanied structures I don't even think have integrity nor can accumulate Damage Tokens, so if a built structure were damaged, then Condemned, then Condemn is destroyed, then the Structure rebuilt, it would be fresh.
But I could see R&D have fun with this idea.

All Creature inside Target Building are exited. That Building is fully engaged and cannot be rebuilt. That Building's Controller may use 2 Actions from his Character to destroy this Effect. (L.O.S. does not apply)
When this Effect leaves play, disengage targeted Building.
See? Now you can respond and make the Ram target illegal! lol
